So, the pears, finished and served with some of the syrup as well as a wedge of a biscuit de savoie studded with Sauternes-soaked raisins.

If I remember correctly, the cake has no butter in it. I found the recipe looking for a cake for someone who couldn't have dairy. It's a very light cake, simple flavour. It takes well to being brushed with a syrup for layering.
AS for the pears - try the recipe. Leave out the cloves. It is very much worth it - they will be gorgeous!
